Rhubarb Pom Wonderful

Take 2 Mr. Pom Wonderful:
A friend graciously gave me a bunch of rhubarb from her garden which I was thrilled about. But then I had to figure out what to do with it! My mother makes beautiful ruhbarb pies and crumble, but i wasn't feeling that adventrous or motivated to bake. So I decided to make a light compote, have my little friend, Mr. Pom, help me out!
Fall Ruhbarb Pomegranate Compote
Boil .5 cup water
8oz POM Wonderful Juice
7-8 stalk of ruhbarb, chopped into smaller pieces.
Boil until the ruhbarb becomes soft. Add Sweetener of choice (Stevia!!) to taste

Put on toast, eat with a spoon, serve with ice cream, or my fav-mix into oatmeal!
Delicious!

And I think there may be one more bottle in the fridge......... granita time??
