Carrot Cake Muffins


MMM made these little dudes awhile ago and they were amaaazzzing. I based my recipe off of Chocolate Covered Katie's 24-Carrot Cupcakes, and I thought now would be appropriate time to post them because all of November, Katie is donating any sort of revenue she makes off her Page Views to the Enough Project. She is such a sweetheart and makes the tastiest little vegan treats!

Carrot Cake Muffins
2.5 cups whole wheat flour
.5 cup wheat bran
1/2 tsp powdered stevia
2 tsp of each of the following: baking powder, baking soda, cinnamon
sprinkle of salt
2 large, peeled carrots, shredded
3 cup applesauce
2 tsp vanilla
Mix wet ingredients together first and then add to the dry ingredients
put into muffin tins
heat the oven to 350 and bake for 15-20 min

I love these because they are full of fiber, have no refined sugars, are easy and delicious!

In terms of sweeteners, what do you think about agave nectar??
