Adult Popsicles: Frozen Boozy Treats

For this month's Recipe Redux, we were inspired to create new frozen treats. There was nothing I wanted to do more in this Texas heat! I've seen some alcoholic Popsicle recipes floating around the interweb, and decided to try my own. I had significant doubts that the alcohol would actually freeze, but by limiting the amounts they become frozen delights. So you don't have too worry about getting too tipsy after just one of these treats!

I'm the owner of a sole Popsicle mold. But you can find fantastic popsicle molds on Amazon or just use paper dixie cups with popsicle sticks.

Cape Codder-with a twist
Everyone knows the classic cocktail of cranberry juice, vodka, with a squeeze of lime. I had cranberry vodka, courtesy of Amanda Milad, in my freezer, and decided to switch this cocktail up a bit. Triple 8 vodka in Nantucket also makes a fabulous infused cranberry vodka. This helped cure some New England home-sickness!

  • 0.5 oz Cranberry Vodka
  • 2 oz water
  • Juice of 1 lime
  • Liquid NuNaturals Stevia to taste

Mix together. Freeze. Makes 1 popsicle

Dark Chocolate Bourbon Delights
This recipe was in Fine Cooking (August/September 2009) and I had to try it! I changed a couple things, but the results were spectacular!

4 oz 100% Unsweetened chocolate bar
2 Tablespoons unsweetened cocoa powder
1/2 tsp stevia

a pinch of salt
Stir til melted. Let cool. add
2 TableSpoon Maker's Mark

Pour into 4 8-oz popsicle molds. Freeze and Enjoy!!

Finding Veggies in Texas: Part I

Not going to lie-I was a little bit concernicus about finding vegan options in Texas. After all I am in the land of fried foods, and meat is very rarely severed in small portions. So it's been a fun adventure finding places to dine out as a plant-eater! First-Green Seed & Radical Eats:

Green Seed Vegan
An all-vegan food truck with smoothies, green juice and raw options? GET ME THERE!
I was on my way to the movie from studying and hungry, and lucky for me-I saw Green Seed Vegan's Tweets about their location, and promptly navigated there.
I got the "Tosh" A panini with "jerk-style" garbanzo bean tempeh with plantains and spinach.
Delicious, large and super satisfying. I also tried their dill fries-very greasy, but luckily the portion wasn't too large and they were delicious! The price was right, and I'll definitely be stalking their whereabouts again soon!

Radical Eats
Two of my new vegan friends-Rory and Jalena introduced me to Radical Eats-an all vegetarian Mexican restaurant (no hidden lard to be found!). I drove by twice before realizing that yes, this was indeed the location. The interior and exterior were very simple, but that food was fantastic. We got aquas fresco and vegan Jalapeno poppers to start (First time ever!)
For my entree, I decided to go all out with the fried avocado tacos. (I'm in Texas after all). The food was quite good, a little oil-heavy, but the variety and vegan choices on the menu were fantastic! I'll definitely be back-maybe for their Mimosa Sunday brunch??

Giveaway: NuNaturals

Smoothie Buzz

Caffeinating in Houston: Part 1

I was bemoaning the lack of a good coffee shop in Houston the yesterday. Starbucks are everywhere, but i knew this city had to have some great micro-roasters. So who to my rescue but twitter, once again. The wonderful people behind Eating Our Words said i HAD to go to Catalina Coffee, Revival Market or Greenway Barista. Lucky me and I had a 3 hour gap to kill (the amount of free time i have right now is slightly unnerving) so i picked my first "victim"-Catalina Coffee.
I walked in and immediately knew that this was a place that took great pride and care in their coffee. With a myriad of options for type/amount of milk and brewing methods in front of me, i settle on a soy macchiato-double shot espresso with a splash of "textured" milk.
Just 4 words: Catalina, I love you.

Unfortunately, no matter how small your sips, macchiatos don't take long to finish. I hate to be the awkward lingerer anywhere so I migrated towards my next AC break, at Revival Market for some Hibiscus Tea to rehydrate. A beautiful small market, with homemade ketchups, bbq sauces, bulk spices, Rancho Gordo beans, and plenty of meat and dairy for those interested. I loved their design aesthetic and commitment to real, whole, artisan foods.
Ok Houston, I 'm starting to get to know you, and love you more. This relationship will work out for at least 6 months and who knows after that!

Winning Summer Gazpacho

When it's this hot outside, most of the time I don't feel like cooking. Instead i crave salads and smoothies. fresh fruit and vegetables. But one of my summertime staples is Gazpacho. It's simple, it's easy, it's satisfying.

  1. Gather Ingredients: 3 tomatoes. 1/2 a cucumber, 1 serrano pepper (optional. I like spice). 2 sticks celery. cilantro, sea salt and pepper to taste. I found this "armenian cucumber" at the Farmers Market, and drawn to it's flowery shape I said "why the heck not"
