February Foodie Penpals

January's Foodie Penpals was so much fun I had to opt in for February

The basics- 100+ blog readers and writers get together and are matched to send each other packages. The spending limit is $15, which won't break the bank-and remember you get a hand-picked package too. Beyond worth it.

Talia of Bite Sized Wellness sent me a fabulous package as a belated VDay present

First was some of the best kale chips I've ever had. I make mine at home with a little hot seseme oil, and nutritional yeast. But these were "cheesy" thanks to cashew cheese. yum!
Then I tried Danielle's Pumpkin Chips. "Chips" made just from dehydrated pumpkin were surprisingly delicious. Salty and sweet-but not too sweet
I just ate them plain. no dips required
Harlow's Kettlecorn was an obvious love. (Whoever first came up with Kettlecorn is my hero)
Last, but certainly not least was Bob's Red Mill Rolled Oats
I wanted to do something better than just make oatmeal with these guys, so i tried my hand at granola. And i'm converted. No more store-bought granola for me. I'll make granola weekly if I have to! Here was my first attempt, and I'm sure there will be many variations to come!
Cranberry Almond Olive Oil Granola
  • 4 cups rolled oats (old fashioned)
  • 1 cup sliced almonds (roasted)
  • 1 cup dried cranberries
  • 3/4 cup maple syrup (or honey or agave)
  • 1/2 cup olive oil
  • 1 t sea salt
  • 1 t cinnamon
  1. Mix all the ingredients together in a big bowl. I like to use my hands.
2. Spread onto a large baking sheet
3. Cook at 350 degrees for 45 minutes. Stirring every 15 minutes.
4. Eat with some type of milk, over yogurt or ice cream. or out of the container.
Enjoy! I'm obsessed.

A Good Week

Whew it's only Monday and this week is starting off well! I just had to jot down a quick post!
  • I'm employed. Besides the freelance work I do as a social media manager I'm going to start working full time at Whole Foods as their Culinary Demo Specialist in the marketing team. If you're in the Cambridge area give me a shout out! I may start doing some nutritional counseling as well. We all know how I like to be super busy!
  • I'm going to try my hardest to be better at blogging regularly. I love it, and the health bloggers community!
  • Lastly, head on over to the NUGO blog if you want to know more about vegetarian sources of protein!

Recipe Redux: Dark Chocolate Peanut Butter Cups

February=valentine's day=chocolate-right? I'll take love over candy any day, but chocolate is pretty sweet. I have a mild chocolate chip obsession, love chocolate chia pudding, chocolate coconut bliss, and a whole number of truffles. While I failed miserably at making chocolate chip pancakes Valentine's Day morning I redeemed myself with this lil treats. Reese's can eat it's heart out because it has NOTHING on this lil dudes. (Conveniently Reese's ingredients are not listed on the Hershey's website-trying to hide something much?) These lil cups are easy to make, and the dark chocolate and all-natural peanut butter have to give some wonderful health benefits right?
Chocolate PB Hearts

Dark Chocolate
All Natural PB (Read: One ingredient: Peanuts)
Sea Salt (Obsessed with this smoked sea salt from Trader Joes)
Mini cupcake tins OR a candy mold OR an ice cube tray (my apt conveniently always has vday themed ice. so much love lives here)
  1. Melt 5-6 oz Dark Chocolate. In microwave or on the stove.
  2. While melting, mix 4 TBS of natural PB with 1 TBS honey ( or maple syrup) and 1/4 tsp sea salt
  3. Pour half the melted chocolate into cups/tins/molds
  4. Let cool (put in freezer to speed this up)
  5. Add dollops of pb on top of bottom layer of chocolate
  6. Cover PB with the remaining Chocolate
  7. Set in Fridge to cool/harden
  8. Enjoy!

Self Love

After spending the weekend totally unplugged from technology/work it's back to it this Monday. Should be a pretty great week. In case you were unaware; Tomorrow is Valentine’s Day. A day to exchange sweet nothings with your loved ones, shower them with roses and chocolates and hope for another year of love.
