January's Foodie Penpals was so much fun I had to opt in for February

First was some of the
best kale chips I've ever had. I make mine at home with a little hot seseme oil, and nutritional yeast. But these were "cheesy" thanks to cashew cheese. yum!

Then I tried
Danielle's Pumpkin Chips. "Chips" made just from dehydrated pumpkin were surprisingly delicious. Salty and sweet-but not too sweet

I just ate them plain. no dips required
Harlow's Kettlecorn was an obvious love. (Whoever first came up with Kettlecorn is my hero)

Last, but certainly not least was
Bob's Red Mill Rolled Oats

I wanted to do something better than just make oatmeal with these guys, so i tried my hand at granola. And i'm converted. No more store-bought granola for me. I'll make granola weekly if I have to! Here was my first attempt, and I'm sure there will be many variations to come!
Cranberry Almond Olive Oil Granola
4 cups rolled oats (old fashioned)- 1 cup sliced almonds (roasted)
- 1 cup dried cranberries
- 3/4 cup maple syrup (or honey or agave)
- 1/2 cup olive oil
- 1 t sea salt
- 1 t cinnamon
- Mix all the ingredients together in a big bowl. I like to use my hands.

2. Spread onto a large baking sheet
3. Cook at 350 degrees for 45 minutes. Stirring every 15 minutes.
4. Eat with some type of milk, over yogurt or ice cream. or out of the container.

Those kale chips look delish!
I was inspired to make my own granola after receiving my Pen Pal box, too. It was easy and yummy.
