I'm a big fan of the fast, delicious and nutritious meals. Working 7 days a week every meal I'm making right now is a "quick weeknight meal." And while I love going out to eat, and getting take out, there is something incredibly soothing and meditative for me in making my own food. It just me and the garlic to be chopped, pasta to be boiled, veggies to be sauteed.
Sometimes these days there's a moment of hesitation- should I just pick up something from the Whole Foods Salad bar? mmm Thai Takeout. But then I think about what I really want, and get excited to get home and whip it up.
So on Sunday I decided to take advantage of a plum tomato sale and roast them into a pasta dish
4 garlic cloves, 1 can cannelloni beans and 1 pint plum tomatoes, sliced in half, drizzled in olive oil
Best enjoyed with a glass of wine. and a man who loves me even with garlic breath.
