Elizabeth Cooks: Roasted Plum Tomato Pasta

I'm a big fan of the fast, delicious and nutritious meals. Working 7 days a week every meal I'm making right now is a "quick weeknight meal." And while I love going out to eat, and getting take out, there is something incredibly soothing and meditative for me in making my own food. It just me and the garlic to be chopped, pasta to be boiled, veggies to be sauteed.

Sometimes these days there's a moment of hesitation- should I just pick up something from the Whole Foods Salad bar? mmm Thai Takeout. But then I think about what I really want, and get excited to get home and whip it up.

So on Sunday I decided to take advantage of a plum tomato sale and roast them into a pasta dish
4 garlic cloves, 1 can cannelloni beans and 1 pint plum tomatoes, sliced in half, drizzled in olive oil
 broiled for 20 minutes
served on whole wheat linguine and bed of spinach

Best enjoyed with a glass of wine. and a man who loves me even with garlic breath.

Any favorite quick meals? I'm dying to expand my recipe library!

This sounds like a great way to use up cherry tomatoes! The husband hates whole cherry tomatoes (yeah, that sensation when you bite into one just doesn't do it for him). Your recipe is an awesome alternative.

I love gnocchi for my "needs to be done in 5 minutes meal." TJs has an amazing vegan whole wheat gnocchi, and I add a can of diced tomatoes, fresh spinach, and maybe some olives or capers or chickpeas if I'm getting fancy.

My favorite quick dinner is pizza! TJ's whole wheat dough topped with whatever veggies I have on hand, and some cheese. It's faster than takeout most times....
