Although I do often have this expression, this is not me. But I do enjoy kelp/seaweed. Because it's delicious and so gosh darned good for you! There's a whole other eco system below our seas-why limit yourself to earth vegetables??Wakame absorbs 10 X it's weight in water and is extremely nutrient dense with a variety of minerals including calcium, iron, magnesium, phosphorus, potassium and trace amounts of zinc, copper, manganese and selenium. In addition, wakame contains beta carotene and folate. Wowza! Traditionally eaten in miso soup I challenged myself to come up with something new. And here's what happened. It's pretty delicious. And my meat-eating man even loved it. His tastebuds are how I really judge whether I'm rockin' the kitchen.
