Recipe Redux: What's Up Wakame?

Wait, you haven't met my friend Wakame? Oh my goodness, it's time for you to sea what you've been missing!

"What the heck is Wakame??"

I know you're thinking-"Sea Elizabeth really went off the deep end. Now she's eating kelp like a little plankton." (I'm just paraphrasing your thoughts).
Although I do often have this expression, this is not me. But I do enjoy kelp/seaweed. Because it's delicious and so gosh darned good for you! There's a whole other eco system below our seas-why limit yourself to earth vegetables??Wakame absorbs 10 X it's weight in water and is extremely nutrient dense with  a variety of minerals including calcium, iron, magnesium, phosphorus, potassium and trace amounts of zinc, copper, manganese and selenium. In addition, wakame contains beta carotene and folate. Wowza! Traditionally eaten in miso soup I challenged myself to come up with something new. And here's what happened. It's pretty delicious. And my meat-eating man even loved it. His tastebuds are how I really judge whether I'm rockin' the kitchen.
Wakame Stirfry
Steam baby bok choy, carrots and extra firm tofu
 While this is steaming, soak 1/2 cup wakame in 1 cup of water. Wait for 5 minutes and then drain remaining water.
 Mix up some sassy sauce: 1 T sesame oil, 1 T soy sauce, 1/4 cup OJ, 1 tsp grated ginger, 1 tsp sriracha. Add soaked wakame to steamed veg + tofu. Pour sauce over all.
Serve over a bed of brown rice. (Frozen brown rice is my new best friend)

Yum! I love Wakame, and frozen brown rice... I am always looking for new seaweed recipes, it's so good for you! Thanks for posting, Alex

Love your recipes because they are always a little out of the box (in a good way) and I usually learn something new - like to look out for wakame now! And love your phrase "why limit yourself to earth veggies" - brilliant :)

Don't you just love how easy Walkman is o prepare?? In all my sea veggie experiments thus far, I've never thought to stir fry it, but your recipe sounds delicious! Happy ReDux :-)
