Elizabeth Cooks: Summer Chickpea Salad

There's not much more that I love in the summer than sitting outside with good friends, grilling, and enjoying good food and drink. Since I'm in a grill-less apartment, I leech onto those who are blessed with a grill and space. (Hopefully I'm slightly less annoying than a mosquito. at least I bring food right?)

I'm kinda obsessed with Dorot frozen herbs. When I buy fresh herbs I usually use about 1/2 before the rest rots. And I am also garden-less and have a black thumb so growing my own is out of picture for now. Dorot frozen ginger, garlic and basil is a real life-saver. It saves time, fingers and flavor. 
So when I needed to bring some plant-based protein to our little bbq, i decided to whip up a quick chickpea salad

Summer Chickpea Salad
  • 1 can garbanzo beans (chickpeas)
  • 1 red onion, diced
  • 1 green bell pepper, chopped
  • 3 cubes Dorot basil (1 T fresh)
  • 3 cubes Dorot garlic (1 T fresh)
  • 1/4 cup blood orange olive oil (regs would be fine too)
  • 1/4 cup apple cider vinegar
  • salt & pepper to taste
Mix olive oil, vinegar, basil, garlic, salt and pepper thoroughly. Then pour over chickpeas, onion and bell pepper. Makes a great side dish or vegetarian main dish!

I highly recommend serving it with fresh grilled squash (brushed with olive oil, salt & pepper), grilled mango and watermelon (adding a splash of tequila and sea salt for good measure), corn and grilled avocado. And a tomato roll from Clear Flour. And eating it outside with friends. MMMM Isn't summer delicious??

Elizabeth Cooks: Purple Potato Salad

What's screams American summer? Potato Salad, grilling, corn on the cob and ice cream would be my top pick! And while all can definitely be a delicious, healthy way to enjoy summer, potato salad has never been at the top of my list. I love almost all foods. Except Mayonnaise. We really don't get along. Aioli's are ok in my book but something about mayo has never turned me on. And because of that I've avoided a lot of potato salads in my life. So when I saw that there was a Recipe Redux Challenge to remake potato salad, with the help of the United States Potato Board, I was all about it. This was going to be a rockin, remade, healthy potato salad, and taste great too! Hence, Purple Potato Salad.

Purple potatoes not only contain potassium and vitamin C, like their plain jane cousins but are also a great source of anthocyanins -powerful antioxidants. Although us nutrition experts recommend 'eating the rainbow' purple is the least consumed. You get a double purple punch with this potato salad! I swapped my enemy mayo for a heart healthy delicious combo of extra virgin olive oil and apple cider vinegar. Since there are no eggs or dairy involved this makes a great picnic food that you won't have to worry about spoiling! Plus it tastes fantastic.

Purple Potato Salad
  • 10 purple potatoes
  • 1 purple onion-diced
  • 1/2 cup dill finely chopped
  • 1/2 cup extra virgin olive oil
  • 1/2 cup apple cider vinegar
  • 1 tsp cumin
  • Salt and pepper to taste

Bring purple potatoes to a rolling boil for 25 minutes. Chop and mix with other ingredients. Serve with your favorite grilled foods, take it on picnic, pack it for lunch! any which way it will be delicious

Recipe Redux: Really Magic Magic Shell

I've been having a lot of fun as a part of Recipe Redux. It's hard to believe that it's been a year already since this fun challenge to dietitians to "redux" recipes started. Last year at this time I was just leaving for Texas to start my dietetic internship. Now I am living what's quite close to my dream life. I'm working in a private practice doing one-on-one nutrition counseling, for amazing clients that are trying to heal their disordered eating patterns. I'm living in one of my favorite cities, with a man I love, friends I adore and soon a puppy will be added to my family! I make a living counseling, speaking, writing and tweeting, which is pretty great! I get to run and sweat it out at barre and yoga, and enjoy some of my favorite restaurants. I am one lucky lady.

So why not share a "small bite to celebrate a big event"??   

Why not a little "ice cream" for these hot summer days? With the ever so addictive Magic Shell on top? But not the one bought in stores, that's loaded with refined sweeteners and hydrogenated oils. Oh no. A really magic magic shell. That's liquid at room temperature and solid on ice cream-perfect for cracking?

"Impossible without a food lab!" You say

Oh no. Have you met my friend coconut oil? This awesome oil has a fantastic property that is great to manipulate for ice cream-it's liquid at room temp but rock hard in the cold. Virgin unrefined coconut oil has a host of polyphenols that make it a healthy fat, and quite anti-inflammatory. Yes it is very high in saturated fat, but they are medium-chain triglycerides, which are metabolized differently, and more apt to be burned as fuels than other saturated fats. While there is still a lot of research to be done on the topic, I'm very inclined to use some of the unrefined type in moderation. (stay away from the refined, heat processed varieties!) A great way to enjoy it in moderation? Magic Magic Shell. 
 1 cup coconut oil (at room temperature)
3/4 cup raw cacao powder
1/2 cup agave or maple syrup
Frozen banana ice cream or So Delicious coconut ice cream

In a hand blender, mix coconut oil, cacao powder (if you don't have the raw type, use a dark unsweetened cocoa powder) and sweetener of choice. Let sit. Pour over Ice cream. Crack away! 
Wondering what the heck banana ice cream is? Simple. Freeze one banana. Put in food processer. Add 1 TBS shredded coconut- voila banana ice cream! Don't believe me? Guess you'll just have to try it yourself! That + raw cacao magic magic shell= a delicious raw dessert!

Elizabeth Eats: Biena Foods

Elizabeth Eats: Perfect Fuel

Two things turned me on to Perfect Fuel chocolate right away:
First they are sold in three locations (besides online): Cambridge, Cambridge and Jackson Hole Wyoming. Basically my two homes. Perfect

counting down the days til I will be mountain biking the tetons!
Second, they have the approval of good friend and molecular physics/science of cooking genius Naveen Sinha.

Basically I just had to try it. A small Boston start-up that combines dark chocolate and American ginsing as a pre-workout fuel or snack.

Dark Chocolate (we're talking over 70% here with no dairy people) is actually a rich source of antioxidants. Antioxidant consumption is important to everyone-especially endurance athletes, to repair the damage we put our bodies thru.

My verdict? It's delicious! Not very sweet. I thought chocolate would be the worst idea before a run, but because it's not sweet and is dairy free I found it to be a great energizer!
