I love summer fruit. Seriously I do. Although pumpkin does still have a special place in my heart, there is something so wonderful about perfect watermelon, pineapple and cantaloupe. mmmm. And although my boyfriend would very much disagree with me, I adore mixing fresh summer fruits in salad. Savory and sweet, salty and rich. Plus when the temperature is rising and I'm living in an AC-free sauna apartment no-cook meals are where it's at. Like this salad:
2 cups arugula
1 cup cantaloupe diced
1/2 cup blueberries
1/2 cup slivered or sliced almonds
1 TBS mint leaves, minced
1 TBS honey
1 TBS lime
Salt to taste
In a large bowl layer arugula, cantaloupe, and blueberries. In a separate dish mix honey, lime, mint, and salt. Pour dressing over salad. Sprinkled sliced almonds on top. Enjoy!
