Recipe Redux Summer Salad

I love summer fruit. Seriously I do. Although pumpkin does still have a special place in my heart, there is something so wonderful about perfect watermelon, pineapple and cantaloupe. mmmm. And although my boyfriend would very much disagree with me, I adore mixing fresh summer fruits in salad. Savory and sweet, salty and rich. Plus when the temperature is rising and I'm living in an AC-free sauna apartment no-cook meals are where it's at. Like this salad:

Cantaloupe Salad

  • 2 cups arugula
  • 1 cup cantaloupe diced
  • 1/2 cup blueberries
  • 1/2 cup slivered or sliced almonds
  • 1 TBS mint leaves, minced
  • 1 TBS honey
  • 1 TBS lime
  • Salt to taste

In a large bowl layer arugula, cantaloupe, and blueberries. In a separate dish mix honey, lime, mint, and salt. Pour dressing over salad. Sprinkled sliced almonds on top. Enjoy!

What is with these men?! My husband hates sweet and savory too. So I end up making big salads like this just for me at lunch :)

Yum yum yum! All my favorite fruits - I adore doing the fruit and savory thing, too. Will do this combo with the lettuce from my parents garden!

Yum! Always love the addition of fruit to a savoury salad, but I've never though to use cantaloupe.

Ha! My BF is the same why. Why can't fruit be in savory dishes? I love adding fruit to my salads, pear is my favorite but cantaloupe sounds delicious as well. Thanks for posting!
