Vita Coco Giveaway


To say the last 8 days have been unreal is an understatement. emotions run high, and there's still an edge of tension around Boston. I've been trying to seek out the good news and using friends, family and adorable puppies on buzzfeed to lighten the mood. There have also been gems like this Dove ad to brighten the day.
So when the people at Vita Coco asked if I wanted to do a giveaway, i thought why not. Love me some coconut water, and we could all use a little more giving in our lives.

Thrive Mondays: Reduce Your Carbon Footprint by Being Vegan on Earth Day

The earth is a pretty rad place.
 
I quite like having it as my home

And I think it'd be pretty cool if it was around for awhile

We've been not so nice to the earth. but luckily for me and you, we do have the power to start to make amends. 

and that starts with plants. 

WHAT?? You say. She's gone off the deep end. plants aren't going to save the world!

well they could. When we think about carbon footprint and reducing our impact on the earth we immediately think of recycling, and driving more fuel efficient cars. That's great and important, but our food choices have the greatest impact on our carbon footprint.  Modern day food production takes a lot of resources. you need a whole lot of water, and feed to produce meat in the quantities we demand today. and if it's not done in North America, it's probably coming from South America, at the expense of some amazing rain forest.The carbon emissions from food production is greater than ALL means of transit around the world.

The cool thing about plants is that they don't  need much. And yes you can still get enough protein and calcium from them. And they sure can taste delicious.
 
FUN FACT: According to the Environmental Working Group (EWG) If an American family of four ate no animal products for just ONE day a week, every week for a year, it'd be like taking their car off the highway for 5 weeks. If we all did it, just one day a week, it would be like not driving 91 billion miles!!

FUN FACT: Producing that quarter pound burger requires over 1,000 gallons of water.Plant-based proteins require 1/100 of that. 

Simple, painless ways you can reduce you food's carbon footprint:
  • Embrace Meatless Mondays! For one day a week, toss the meat. There are a multitude of easy, simple meatless recipes out there. Look here, here, here and here
  • Try 1 plant-based meal a day no you don't have to go completely vegan, and start rejecting fur. But starting with just one plant based meal a day is a great first step. A big power salad, or a smoothie? Bam. Take that global warming! 
  • Not ready to go plant-based for just a day? Check out the EWG's guide for Meateaters-eat Greener meat! 
  • BYOB-Bring Your Own Bag. I know it's cliche. just do it. Here's an adorable one from inslee if you're worried about not being fashionable

I Love Boston

I am a runner. I am a marathoner. I am a Bostonian.

To say my world shook yesterday is an understatement. A perfect day for the marathon. Blue skies and 50 degrees were a welcome relief to those who gruelled through 90 degree weather last year. A day when everyone in Boston is happy. Every step of 26.2 is lined with spectators-family, friends and those who seeked to be inspired by the resiliance of the human body. Most of the city has the day off. To celebrate, to be drunk college kid at the sideline, to cheer for everyone. It's a friendly competition that brings thousands from around the world to this town.

Because Boston has always felt like a small town, we often forget that we are just as vulnerable as any other city. Boston is a town where you always bump into someone you know, and despite our gruff exteriors is filled with some amazing, wonderful and inspirational people. While I (like most the city) am a transplant, I've called it home for the last 6 years.

So when I was typing away at my computer at 2:50, getting some work done, I knew getting multiple text messages from friends across the country asking if I was ok, wasn't a good sign. Turning on the tv I didn't see how the footage of explosions at the finish line of the Boston Marathon could be real. This can't happen to our city. Frantically calling, having no cell service, texting and facebookin to try to find out if all my friends in the area were ok. Once everyone checked in, I breathed a small sigh of a relief, because my corner of this town was ok. Shaken, scared, skiddish, but ok.

As the death and injured toll rose I tried to focus on the positive. The heroic volunteers rushing towards the bombs, the rapid response of the police and investigative team. The inspirational messages and checking in done across all forms of social media, from people whom i've never met, who may never have even been to Boston. Strangers reaching out to help.

Boston is a resiliant strong town. The running community is resiliant and strong. We will get through this, stronger than ever.

Feat and hatred never help. So now I can only do what I know. Hug those I love even closer. Tell people I love them. Send love and healing thoughts to those who are hurt. Take care of myself. And run.

  1. Take care of your mental health: Breathe, meditate, do yoga, stretch it out. (if you've never foam rolled, start now)
  2. Donate to Red Cross
  3. Support local Boston running companies: New Balance, Marathon Sports, City Sports, South End Athletic Company, Heartbreak Hill Running Company, November Project, Run Keeper
  4. Run (if you're looking to start a training program I love the Greatist's plans I'm using theirs for my half marathon in 2 weeks)
We are strong. Let's run.

Elizabeth Cooks: The Ultimate Recovery Smoothie Vegan and Gluten Free

You just endured a grueling workout. And now you're roaming through the cupboards trying to see what else you can eat. Why not nourish your muscles and your tastebuds with a delicious recovery smoothie?? This is one of my all-time faves. The coconut water helps to replenish electrolytes. Maca helps to nourish the adrenal glands and reduce cortisol levels. Tart cherry juice is ridiculously anti-inflammatory. and goji berries are antioxidant powerhouses. High-quality protein blend with BCAAs helps to repair and rebuild those tired muscles. BAM! take that inflammation and muscle soreness. See ya never!

Recovery Smoothie
  • 1 scoop multisourced protein blend (such as Vega Performance Protein)
  • 1 frozen banana
  • 1 cup unsweetened coconut water like Vita Coco
  • 1/4 cup goji berries
  • 1/4 cup tart cherry juice or dried-freeze powder
  • 2 Tbs maca


Blend, drink. Your muscles are already thanking you.

Elizabeth Cooks: Coconut Quinoa Pilaf

Quinoa rocks. It is International Year of Quinoa afterall. Packing a protein punch, plus B-vitamins, iron and potassium, ya gotta add it to your life. Add a tropical twist with a little coconut! Summer in spring no?
Coconut Quinoa Pilaf
Ingredients:
  • 16 oz unsweetened Vita Coco coconut water
  • 1 cup quinoa
  • 1/4 cup shredded coconut
  • 1/4 cup sliced almonds
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp smoked paprika
Instructions:
  1. Thoroughly rinse quinoa to get rid of those dang saponins
  2. Add coconut water, and then bring to a boil.
  3. Once boiling, reduce the heat, throw a top on it, and simmer for 20 minutes.
  4. Stir in coconut, almonds, and spices.
  5. Serve as a side to a stir fry. Or add a little molasses and have for breakfast.
I prefer it with my favorite condiments: kimchi, sriracha and wine.

Elizabeth Cooks: Spicy Kimchi Roasted Brussels Sprouts

I love Brussels sprouts. Even when they're not perfectly in season. But sometimes New England Springs feel a lot like New England Falls. Deceptive sunlight that isn't always very warm. So spring Brussels sprouts it is. with kimchi. with heat. without bacon. (Sorry David Chang)
Spicy Kimchi Roasted Brussels Sprouts
  • 1 lb Brussels sprouts
  • 1 cup kimchi
  • 2 TBS sea salt
  • 2 TBS hot roasted seseme oil
Slice every lil sprout in half. Toss with kimchi, sea salt and spicy oil until sufficently mixed. Spread out on a parchament paper lined baking sheet. Roast at 350 for 45 minutes, stirring occaisionally. Enjoy!
